Antipasto Macaroni Salad

We just got back from a cook out where I had the most amazing macaroni salad!  Haha I made this and thought I'd share the recipe with you;

Antipasto Mac Salad

cook elbow macaroni.  cool the cooked elbows under cold water
add lemon juice and toss
add hard salami cut into tiny pieces
add grape tomatoes sliced in half
add one tablespoon capers
add small mozorella cheese balls quartered.  8 oz container
add small pieces of horseradish gouda cheese
add one half tsp herbes provence
add one half cut chopped celery
add mixed marinated olives chopped or quartered and juice
add good olive oil
add 2 minced basil leaves fresh from the garden
sea salt and freshly ground pepper to taste.

toss well and let sit at room temp.  Chilled loses flavor.

goes well with Pino Grigio
